VARYOON PATATA A Sindhi speciality recipe with Dal Vadis and potatoes in a onion masala

INGREDIENTS:
Wadis : 2 nos, broken into pieces
Potatoes : 4 nos peeled & diced
Tomatoes : 3 medium sized
Onions : 2 medium sized
Jeera powder : 1 tsp
Coriander powder : 1 & 1/2 tbsp
Red chilli powder : 1 tsp
Turmeric powder : 1/2 tsp
Oil : 3 tbsp
Salt : to taste
Water : as required
Coriander leaves : for garnish

METHOD

  1. Chop the onions -n- tomatoes finely, peel and dice the potatoes
  2. Heat oil in a kadai fry onions until well browned, add in wadis and fry well, add in potatoes and saute, add in tomatoes and all dry masalas. Continue frying until well fried now add in water enough for the gravy, add in salt.
  3. Cover and cook the vegetable until vadis and potatoes are well done. check for salt.
  4. Serve hot, garnish with chopped coriander serve with phulkas!
