Tamate Ji Kari :
TAMATE JI KARI A Sindhi Sunday lunch special, tomato flavoured curry with vegetables served hot with boiled rice and aloo tuk!

INGREDIENTS:

Tomatoes : 500 gms
Besan : 2-3 tbsp
Oil : 2 tbsp
Hing : a pinch
Green chillies
Salt : to taste
Bhindis : 10-15 nos
Guvar : 10-15 nos
Potatoes : 2-3 nos
Curry leaves : 8-10 nos
Coriander leaves : 2-3 tbsp
Red chilli powder
Water : as required
Jeera seeds : 1/2 tsp
Methi seeds : 1/2 tsp
Tamarind pulp : 2-3 tbsp

METHOD

  1. Wash & halve the tomatoes in enough water, boil them until soft and mashy.
  2. Squeeze out the pulp from the cooked tomatoes completely. Discard the peels.
  3. Heat oil in a pan, add jeera, mustard seeds, curry leaves and green chillies, fry well, add hing, also add in besan and fry well.
  4. Add in the chilli powder, add in the prepared tomato pulp & a little water for the curry.
  5. Add salt and all the vegetables. Boil & simmer let all vegetables get tender.
  6. Check for salt and sourness add tamarind pulp if required.
  7. When vegetables are done, curry is thick enough, add in coriander leaves and serve hot with rice!
