INGREDIENTS

Coconut Milk 3 cups (thin) + 1 cup thick milk
Onions 1 medium sliced
Mixed Vegetables 2 cups
Green chillies 2 Nos. slit
Turmeric powder ½ teaspoon
Ginger ½ teaspoon crushed
Cinnamon 1 inch piece
Lemon grass 1 stalk, dried
Salt to taste.

METHOD

  1. Mix in all the ingredients except your choice of mixed vegetables cut into cubes, add in salt, thin coconut milk in a large saucepan and simmer gently for atleast 10 minutes.
  2. Add in the cubed veggies and cook until vegetables are tender.
  3. Add in the thick coconut milk, mix well, check for seasoning. Simmer for further 5-7 minutes. Serve hot with boiled rice
  4. Use a combination of carrots, beans, cauliflower and potatoes as your choice for this curry as it tastes good and looks great.
